Serves: 4

INGREDIENTS:

  • 1 (15 1/2-ounce) can chickpeas (garbanzos), drained and rinsed
  • 2 tablespoons tahini (sesame paste)
  • 1 tablespoon ground cumin
  • Juice of 1 lemon (about 2 ounces)
  • 1/2 cup, plus 1 tablespoon, olive oil
  • Coarse salt and freshly ground black pepper
  • 4 (7-inch) loaves pita bread
  • 1 cello box alfalfa sprouts
  • 12 ripe cherry tomatoes, washed and halved

INSTRUCTIONS:

Preparing the Hummus:

  1. To begin, let’s create the flavorful hummus that will serve as the base for our pita pockets. In a food processor, combine the drained and rinsed chickpeas, tahini, ground cumin, and half of the lemon juice.
  2. Start processing the ingredients at high speed. While the machine is running, gradually add 1/2 cup of olive oil. Continue processing until you achieve a smooth and creamy consistency.
  3. Taste the hummus, and adjust its flavor to your liking by adding salt, pepper, and the remaining lemon juice. Give it a final whirl in the food processor to ensure everything is well combined. Your hummus is now ready to impart its delightful flavor to your pita pockets.

Assembling the Pita Pockets:

  1. Take each of the pita bread loaves and create an opening at the top to form a pocket. This will be where we stuff our delicious filling.
  2. Generously slather each pita pocket with a portion of the prepared hummus. The creamy and flavorful hummus will serve as a delicious base for the other ingredients.
  3. Now, it’s time to add a burst of freshness and crunch to our sandwiches. Into each pita pocket, stuff a tuft of alfalfa sprouts approximately the size of a golf ball. This vibrant green addition not only provides a pleasing texture but also contributes a wealth of nutrients.
  4. To enhance the overall appeal and taste of your sandwiches, add 6 halved ripe cherry tomatoes into each pocket. The juicy sweetness of the cherry tomatoes pairs perfectly with the savory hummus and the crisp sprouts.
  5. To tie everything together and infuse even more flavor, drizzle the remaining tablespoon of olive oil over the contents of all the sandwiches. This final touch not only adds a subtle richness but also helps meld all the flavors together.
