INGREDIENTS:

  • 2 cans (14½ ounces each) Italian diced tomatoes
  • 2 jars (6½ ounces each) marinated quartered artichoke hearts
  • 2 packages (9 ounces each) refrigerated cheese tortellini
  • 2 cups chopped onions
  • ½ cup minced fresh parsley
  • 2 to 4 tablespoons minced fresh or 2 to 4 teaspoons dried basil
  • 2 teaspoons minced garlic
  • ½ teaspoon dried oregano
  • ⅛ teaspoon crushed red pepper flakes
  • ½ cup olive oil
  • 1 can (2¼ ounces) sliced ripe olives, drained
  • ½ teaspoon salt
  • ¼ cup shredded Parmesan cheese

 

PREPARATION:

  1. Drain the Italian diced tomatoes, reserving ⅔ cup juice, and set it aside. Also, drain the marinated artichoke hearts, reserving ¾ cup liquid. Chop the artichoke hearts and set them aside.
  2. Cook the cheese tortellini according to the package directions. Meanwhile, in a large skillet, saute the chopped onions, minced parsley, basil, garlic, oregano, and crushed red pepper flakes in olive oil for 4-5 minutes until the onions become tender. Add the reserved tomatoes, tomato juice, and artichoke liquid to the skillet.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer, uncovered, for 10-12 minutes until slightly thickened. Drain the cooked tortellini and add it to the tomato mixture. Stir in the drained sliced ripe olives, salt, and reserved chopped artichokes. Heat everything through and finish by sprinkling the dish with shredded Parmesan cheese.
