Serves: 4

INGREDIENTS:

  • 4 large tomatoes
  • 1 cup cooked quinoa
  • 1 stalk celery, minced
  • 1 tablespoon fresh garlic, minced
  • 2 tablespoons fresh oregano, minced
  • 2 tablespoons fresh Italian parsley, minced
  • 1 teaspoon dried chervil
  • 1 teaspoon fennel seeds
  • 1/2 cup water

INSTRUCTIONS:

  1. Prepare the Tomatoes: Begin by cutting out the cores of the four large tomatoes and discard them. Carefully scoop out the seeds from each tomato while leaving the tomato walls intact. You’ll create a hollow space for the filling.
  2. Prepare the Filling: In a small bowl, combine the cooked quinoa, minced celery, minced garlic, fresh oregano, fresh Italian parsley, dried chervil, and fennel seeds. Mix the ingredients thoroughly to create a flavorful stuffing.
  3. Fill the Tomatoes: Divide the prepared quinoa and herb filling evenly among the four hollowed-out tomatoes. Gently press the filling into each tomato, ensuring that it’s well-packed.
  4. Arrange in the Slow Cooker: Place the stuffed tomatoes in a single layer inside an oval 4-quart slow cooker.
  5. Add Water: Pour 1/2 cup of water into the bottom of the slow cooker. The water will help create steam and ensure that the tomatoes cook evenly.
  6. Cook in the Slow Cooker: Set the slow cooker to the low heat setting and cover it. Allow the stuffed tomatoes to cook for approximately 4 hours. Slow cooking will allow the flavors to meld together, and the tomatoes will become tender while maintaining their shape.
