Hearty Baked Brown Rice takes the traditional baked brown rice recipe to the next level by incorporating aromatic onions and flavorful roasted red peppers. This heartwarming dish offers a delightful combination of textures and tastes, making it a perfect side dish or even a satisfying main course. The method involves sautéing the onions to create a rich and aromatic base before baking the rice to perfection in a Dutch oven. As a result, you’ll enjoy tender and flavorful brown rice, elevated with the addition of roasted red peppers and finished with fresh parsley, black pepper, Parmesan cheese, and zesty lemon wedges. This versatile recipe also offers two variations—a Greek-inspired version with peas, feta, and mint, and a Southwestern twist with black beans, bell pepper, cilantro, and lime.

SERVES 4 TO 6

INGREDIENTS:

  • 4 teaspoons vegetable oil
  • 2 onions, chopped fine
  • 2¼ cups water
  • 1 cup vegetable broth
  • 1½ cups long-grain brown rice, rinsed
  • 1 teaspoon salt

INSTRUCTIONS:

  1. Sauté Onions: In a Dutch oven, heat vegetable oil over medium heat until shimmering. Add the chopped onions and cook, stirring occasionally, until they are well browned and caramelized, which usually takes about 12 to 14 minutes.
  2. Combine Water, Broth, Rice, and Salt: Add water and vegetable broth to the caramelized onions. Cover the pot and bring the mixture to a boil. Once boiling, stir in the rinsed long-grain brown rice and salt.
  3. Bake the Rice: Cover the Dutch oven with its lid, transfer it to the preheated oven, and bake the rice until all the liquid is absorbed and the rice becomes tender. This typically takes around 65 to 70 minutes.
  4. Fluff and Add Roasted Red Peppers: Remove the pot from the oven and uncover it. Use a fork to fluff the rice gently. Stir in the chopped roasted red peppers and let the rice sit for 5 minutes.
  5. Add Parsley and Pepper: After the resting period, stir in the fresh parsley and black pepper to enhance the flavors of the dish. Serve the Hearty Baked Brown Rice with grated Parmesan cheese and lemon wedges for added zest and richness.

VARIATIONS:

  • Hearty Baked Brown Rice with Peas, Feta, and Mint: For a Greek-inspired twist, reduce the amount of oil to 1 tablespoon and omit 1 onion. Substitute the roasted red peppers with 1 cup of thawed frozen peas, and use ¼ cup of minced fresh mint instead of parsley. Grate ½ teaspoon of lemon zest instead of black pepper and replace Parmesan with ½ cup of crumbled feta cheese.
  • Hearty Baked Brown Rice with Black Beans and Cilantro: For a Southwestern variation, substitute 1 finely chopped green bell pepper for 1 onion. Once the vegetables are well browned, add 3 minced garlic cloves and cook until fragrant, about 30 seconds. Replace roasted red peppers with 1 (15-ounce) can of black beans and use ¼ cup of minced fresh cilantro instead of parsley. Omit Parmesan and serve the dish with lime wedges instead of lemon.

Enjoy this Hearty Baked Brown Rice as a comforting and nutritious addition to your meals. Its versatility and rich flavors make it an excellent accompaniment to a wide range of main courses or a satisfying standalone dish.
