INGREDIENTS:

  • ¾ cup raisins
  • 1 cup hot water
  • ½ cup shortening
  • 2 cups sugar
  • 1 egg
  • 2½ cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1½ cups applesauce
  • ½ cup water
  • ½ cup chopped walnuts
  • Confectioners’ sugar (optional)

 

PREPARATIONS:

  1. Soak raisins in hot water and set aside.
  2. In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg. Combine flour, baking soda, salt, cinnamon, cloves, and nutmeg. Add dry ingredients to the creamed mixture alternately with applesauce and water. Fold in drained raisins and chopped walnuts.
  3. Transfer the batter to a greased 13×9-inch baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool on a wire rack. Dust with confectioners’ sugar, if desired. Serve warm or cold.
