Golden Pudding, also known as “Golden Syrup Pudding,” is a traditional British dessert that combines the sweet, rich flavors of golden syrup with a light, sponge-like pudding. This dessert is characterized by its golden, gooey sauce that forms underneath the pudding during baking, creating a delightful contrast in textures and flavors. Golden Pudding is a comforting and timeless dessert, perfect for those seeking a taste of British culinary heritage.

The history of Golden Pudding can be traced back to the rich tradition of British puddings, which have been enjoyed for centuries. Puddings were originally savory dishes made by enclosing meats, fruits, or other ingredients in a casing of dough or suet and boiling them. Over time, sweet puddings, often steamed or baked, became increasingly popular.

Golden Syrup, a thick and amber-colored sugar syrup with a distinctive toffee-like flavor, was invented in the early 19th century by John Tate, a chemist in England. Lyle’s Golden Syrup, the most well-known brand, was founded by Abram Lyle in 1883. This sweet syrup quickly gained popularity and found its way into numerous desserts and baking recipes.

Golden Pudding emerged as one of the delightful creations that incorporated this new ingredient. The combination of golden syrup and a simple sponge pudding resulted in a dessert that was both delicious and easy to prepare, making it a favorite in British households.

During times of rationing and economic hardship, which were particularly prevalent during and after World War II, desserts like Golden Pudding became even more popular due to their economical use of basic pantry ingredients. The simplicity and affordability of the dish made it accessible to a wide range of people.

Today, Golden Pudding remains a cherished dessert, enjoyed as a comforting treat on cold days or as a nostalgic taste of British culinary tradition. Its warm, gooey syrup and light sponge create a harmonious balance that continues to delight dessert enthusiasts of all ages.

INGREDIENTS

  • 1/2 cup (125g) all-purpose flour
  • 1/2 cup (125g) granulated sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup (60ml) whole milk
  • 1/4 cup (60ml) golden syrup
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract

INSTRUCTIONS

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Pudding Dish:
    • Grease a 1-quart (1-liter) ovenproof dish with butter. A shallow, round dish works well for this dessert.
  3. Sift Dry Ingredients:
    • In a mixing bowl, sift together the flour, sugar, baking powder, and a pinch of salt.
  4. Combine Wet Ingredients:
    • In a separate bowl, mix together the milk, golden syrup, melted butter, beaten egg, and vanilla extract.
  5. Combine Dry and Wet Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, stirring until well combined. The resulting batter should be smooth.
  6. Pour into Dish:
    • Pour the batter into the prepared pudding dish.
  7. Create the Golden Syrup Layer:
    • Drizzle the remaining golden syrup evenly over the top of the batter. Do not stir; the syrup will sink during baking.
  8. Bake:
    • Place the pudding dish on a baking sheet (to catch any potential drips) and put it in the preheated oven.
    • Bake for approximately 30-35 minutes or until the pudding is golden brown on top and a skewer or toothpick inserted into the center comes out clean.
  9. Serve:
    • Serve the Golden Pudding warm, either on its own or with a scoop of vanilla ice cream, custard, or whipped cream.

NOTES:

  • Golden Pudding is a classic British dessert that encapsulates the essence of comfort food. With its warm, gooey syrup and light, fluffy sponge, it’s a delightful treat that continues to bring joy to dessert lovers around the world.
