- 2 large eggs
- 1 large egg yolk
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
- ½ teaspoon grated lemon zest
- Confectioners’ sugar
FOR WHIPPED CREAM
- 1 cup heavy cream
- 2 tablespoons dark rum
INSTRUCTIONS:
TO MAKE THE CAKE
- Melt the butter in a large skillet. Pour 6 tablespoons of the butter into a large bowl.
- Add the apples to the butter remaining in the skillet and cook over medium-low heat, stirring occasionally, until tender, about 10 minutes. Remove the pan from the heat and let cool slightly.
- Place a rack in the center of the oven and preheat the oven to 375°F (190°C). Butter and flour a 9-inch round cake pan and tap out the excess flour.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Whisk the eggs and yolk, granulated sugar, vanilla, and lemon zest into the butter in the bowl.
- Beat in the dry ingredients with a wooden spoon.
- Fold in the cooked apples.
- Scrape the batter into the prepared cake pan.
- Bake for 30 to 35 minutes, or until the cake is browned and puffed.
- Cool on a wire rack for 10 minutes.
- Invert the cake onto a plate and lift off the pan, then invert the cake again onto the rack to cool completely.
TO MAKE THE WHIPPED CREAM
- Place a large bowl and your mixer beaters in the refrigerator to chill.
- Just before serving, pour the cream and rum into the chilled bowl and beat with an electric mixer on high speed until soft peaks form.

- Sprinkle the cake with confectioners’ sugar.
- Cut into wedges and serve with the whipped cream.
