INGREDIENTS

  • 225g/8oz dried egg noodles
  • 50ml/2fl oz groundnut oil
  • 5cm/2in piece of fresh root ginger, finely shredded
  • 7 spring onions, shredded
  • 2 tablespoons light soy sauce
  • Salt and freshly ground black pepper

PREPARATIONS

  1. Strip the leaves from the coriander sprigs and roughly chop them using a cleaver or a large sharp knife.
  2. Cook the dried egg noodles according to the packet instructions. Once cooked, rinse them under cold water and drain well. Toss the noodles in 1 tablespoon of groundnut oil to prevent sticking.
  3. Heat a wok over high heat until hot. Add the remaining groundnut oil and swirl it around the wok.
  4. Add the finely shredded ginger to the wok and stir-fry for a few seconds until fragrant.
  5. Add the cooked noodles and shredded spring onions to the wok. Stir-fry for 3-4 minutes until the noodles are heated through and well coated with the ginger and spring onions.
  6. Sprinkle the light soy sauce over the noodles and season with salt and freshly ground black pepper. Toss the noodles well to evenly distribute the flavors.
  7. Finally, sprinkle the chopped coriander leaves over the noodles and give them a final toss.
  8. Serve the ginger and coriander noodles immediately, while they are still hot and flavorful.

SPECIAL INSTRUCTIONS

  • Adjust the amount of ginger according to your taste preferences. If you prefer a milder ginger flavor, use less ginger. For a stronger ginger kick, add more.
  • Feel free to add other vegetables or proteins to the dish, such as thinly sliced bell peppers, bean sprouts, or cooked shrimp or chicken. Just make sure to adjust the cooking time accordingly to ensure everything is cooked through.
  • You can garnish the noodles with additional fresh coriander leaves before serving for extra freshness and visual appeal.

TIPS

  • To easily shred the ginger, peel the skin off with a spoon or a peeler, then use a grater or a sharp knife to finely shred it.
  • Be careful not to overcook the noodles, as they can become mushy. Follow the package instructions for the recommended cooking time and check for doneness by tasting a strand of noodle before draining.
  • For added flavor, you can drizzle a few drops of toasted sesame oil over the noodles just before serving.
