INGREDIENTS

For the Shortbread Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cut into small cubes

For the Lime Filling:

  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 2 teaspoons lime zest
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • Powdered sugar, for dusting (optional)

INSTRUCTIONS

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking pan.
  2. Make the Shortbread Crust: In a food processor, combine the all-purpose flour, powdered sugar, and salt. Pulse a few times to blend. Add the cold, cubed unsalted butter and pulse until the mixture resembles coarse crumbs.
  3. Form the Dough: Turn the crumbly dough mixture out onto a clean, floured surface. Gently knead and press the dough until it forms a cohesive ball.
  4. Press into Pan: Press the shortbread crust mixture evenly into the bottom of the greased baking pan to create a smooth and compact layer.
  5. Bake the Crust: Place the crust in the preheated oven and bake for approximately 18-20 minutes, or until it’s lightly golden around the edges. Remove it from the oven and allow it to cool slightly while you prepare the lime filling.
  6. Prepare the Lime Filling: In a mixing bowl, whisk together the granulated sugar, eggs, fresh lime juice, lime zest, all-purpose flour, and baking powder until well combined and smooth.
  7. Pour the Filling: Pour the lime filling evenly over the baked shortbread crust.
  8. Bake Again: Return the pan to the oven and bake for an additional 20-25 minutes or until the filling is set and no longer jiggly in the center.
  9. Cool and Chill: Allow the Gimlet Bars to cool in the pan on a wire rack. Once they reach room temperature, refrigerate them for at least 2 hours or until fully chilled and set.
  10. Slice and Dust (Optional): Once chilled, cut the bars into squares or rectangles. Dust the tops with powdered sugar for an extra touch of sweetness and elegance, if desired.
