INGREDIENTS:

  • 6 or 8 well-boiled potatoes
  • Water (from boiling potatoes)

  • 1/2 cup of sour cream (containing a little lemon juice)
  • OR 1 tablespoon of reduced vinegar and 1/2 cup of fresh cream

  1. BOIL POTATOES: Start by boiling 6 or 8 potatoes until they are well-cooked and tender. This should take approximately 20-30 minutes, depending on the size of the potatoes.
  2. RESERVE WATER: Once the potatoes are boiled, reserve some of the water used for boiling. You’ll need this later to create the soup.
  3. MASH POTATOES: While the potatoes are still hot, pass them through a sieve or mash them until they are smooth and free of lumps. Use some of the reserved potato water to achieve the desired consistency for your soup.
  4. ADD CHOPPED CHIVES: Stir in 1 tablespoon of chopped chives (or shallot or onion) to the mashed potatoes. This will add a delightful oniony flavor to the soup.
  5. SEASON WITH PARSLEY: Season the soup with 1 teaspoon of chopped parsley. This adds a fresh and herby element to the dish.
  6. INCORPORATE SOUR CREAM (OR VINEGAR AND CREAM): You have two options here:
    1. Option A: Add 1/2 cup of sour cream that contains a little lemon juice. This will provide a creamy and slightly tangy element to the soup.
    2. Option B: If you prefer, use 1 tablespoon of reduced vinegar and 1/2 cup of fresh cream instead of sour cream. This alternative will also give your soup a unique and rich taste.
  7. SIMMER: Let the soup simmer for approximately fifteen minutes. This allows the flavors to meld together and creates a delicious, cohesive soup.
