INGREDIENTS:

  • 1 pound garlic scapes

INSTRUCTIONS:

  1. Trim off the triangular tops of the garlic bulbs, leaving the bulbs intact. These tops are dry and stringy, and they won’t blend well into a paste.
  2. Cut the stems of the scapes into 1-inch pieces.
  3. In a food processor, blend the garlic scapes in two batches until they reach a pesto-like consistency.
  4. Sprinkle the lemon juice and sea salt over the blended scapes. You’ll notice that the veggies become juicy immediately.
  5. Transfer the garlic scape paste into a quart-sized jar or crock. Press it down until the brine covers the scapes.

  11. This ferment will keep well for up to 12 months when refrigerated.
