INGREDIENTS:

  • 1 teaspoon to 1 tablespoon butter or oil
  • 2 eggs
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Put a medium skillet over medium heat for about 1 minute to preheat it.
  2. Add the butter or oil to the skillet and swirl it around to coat the pan evenly. Allow the butter to melt and the oil to heat, which takes approximately a minute.
  3. Once the butter’s foam subsides or the oil is hot, crack the eggs into the skillet, being careful not to break the yolks. As soon as the whites lose their translucence, which usually takes about a minute, turn the heat to low.
  4. Sprinkle the eggs with salt and freshly ground black pepper according to your taste preferences.
  5. Cook the eggs on low heat until the whites are completely firm. Pay attention to the area just around the yolk, as it may take a bit longer to cook than the rest of the egg. If the egg has set up high and the whites aren’t spreading thin, you can use one of two techniques to encourage even cooking:
  6. Option 1: Use a knife to cut through the uncooked parts of the whites, allowing some of the still-liquid white    to  fall onto the surface of the pan.
  7. Option 2: Cover the skillet and continue cooking for another minute or two, allowing the trapped heat to cook    the eggs more evenly.
  8. Once the eggs are cooked to your desired level of doneness, remove them from the pan and serve immediately.

 

Additional Variation: Eggs in the Nest or Eggs in the Hole:

  • Cut a hole in the middle of a slice of bread using a biscuit cutter or drinking glass.
  • After melting the butter in Step 2, place the bread slice and the cut-out circle in the skillet.
  • Crack an egg into the hole in the bread (you can add a small pat of butter in the hole before adding the egg).
  • Once the eggs start to firm up, carefully flip the bread slice and the circle over to cook the other side for a few more seconds.
  • Serve the Eggs in the Nest or Eggs in the Hole for a fun and tasty twist on traditional fried eggs.
