These lightly crusted fillets, boasting a delightful crunch and tender interior, are a true culinary delight. Whether paired with tangy tartar sauce or classic ketchup, and served alongside your favorite sides, this dish is a guaranteed crowd-pleaser.

Yield: 4 servings

Prep Time: 10 minutes

Cooking Time: 5–8 minutes

Total Time: 15–18 minutes

INGREDIENTS:

  • 1 egg white
  • 1 tablespoon water
  • 1 cup panko breadcrumbs
  • 2 tablespoons extra-light virgin olive oil
  • 4 4-ounce flounder fillets
  • Salt and pepper, to taste
  • Oil for misting or cooking spray

INSTRUCTIONS:

  1. Preheat your air fryer to 390°F, ensuring it’s ready to create the perfect crispy texture for your flounder fillets.
  2. In a shallow dish, beat the egg white and water together, creating a smooth egg wash that will help the panko breadcrumbs adhere to the fillets.
  3. In another shallow dish, combine the panko breadcrumbs and extra-light virgin olive oil. Mix well until the oil is evenly distributed and the mixture becomes crumbly. The best way to achieve this is by using your hands.
  4. Season the flounder fillets with a touch of salt and pepper, according to your taste preferences.
  5. Dip each flounder fillet into the egg wash, ensuring it’s thoroughly coated. Afterward, roll the fillet in the panko crumb mixture, pressing the crumbs onto the fish to create a nicely coated exterior.
  6. Prepare the air fryer basket by spraying it with nonstick cooking spray. Place the coated fillets in the basket and cook them at 390°F for approximately 3 minutes.
  7. After the initial 3 minutes, give the fillets a quick mist with oil or cooking spray. Avoid turning them; instead, continue cooking for an additional 2 to 5 minutes. Your aim is to achieve a beautiful golden-brown and crispy texture.
  8. Using a spatula, carefully remove the cooked flounder fillets from the air fryer basket. Plate them with flair and serve them alongside your preferred dipping sauces, be it tangy tartar sauce, classic ketchup, or any other favorite condiments.

VARIATION:

  • Flounder Fillet Sandwiches For a delightful twist, consider crafting flounder fillet sandwiches. Cut the fillets into smaller pieces and assemble them between whole wheat hamburger buns. Elevate your sandwiches by layering them with shredded lettuce, ripe tomatoes, zesty dill pickles, slices of red onions, and your favorite condiments. This variation offers a creative and satisfying way to enjoy the crispy goodness of flounder fillets.

Whether you savor these flounder fillets on their own or explore the sandwich variation, you’re in for a treat that effortlessly combines a delightful crunch with tender, succulent fish.
