INGREDIENTS:

  • 4 pounds whole chicken
  • Salt, to taste
  • 4 garlic cloves, minced
  • 2 green onions, chopped
  • 2 teaspoons of ginger, minced
  • 3 teaspoons of five-spice powder
  • 4 tablespoons of melted butter
  • 4-5 green onions, cut in half
  • 1 cup grapefruit juice
  • 1 cup chicken stock

 

INGREDIENTS FOR THE MAPLE GLAZE:

  • 2 teaspoons of coconut amino
  • 1 tablespoon of sesame oil
  • 6 tablespoons of maple syrup
  • 4 tablespoons of lemon juice
  • 3 tablespoons of melted butter

 

INSTRUCTIONS:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine salt, minced garlic, chopped green onions, chicken stock, grapefruit juice, minced ginger, five-spice powder, and melted butter. Whisk the ingredients well until they are thoroughly combined.
  3. Rub the mixture under the chicken skin, inside the cavity, and over the skin, ensuring the chicken is evenly coated.
  4. Stuff the chicken cavity with the halved green onions and minced garlic cloves.
  5. Place the seasoned chicken in a roasting pan and roast it in the preheated oven for approximately 35 minutes.
  6. While the chicken is roasting, combine all the ingredients for the maple glaze in a separate bowl.
  7. After 30 minutes of roasting, add the chicken stock and grapefruit juice to the roasting pan.
  8. Every 20 minutes, baste the chicken with the maple glaze, ensuring it is well-coated. Repeat this process several times throughout the roasting time.
  9. The total roasting time for the chicken will be approximately 1 hour and 30 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) and the skin is crispy and golden.
  10. Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes before cutting.
  11. Serve the roasted chicken along with the pan juices, which provide a delicious finishing touch.
