INGREDIENTS:

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup white wine
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cinnamon
  • 1 large eggplant, peeled and diced
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (14 1/2-ounce) can diced tomatoes
  • 3 stalks celery, diced
  • 1/4 cup oil-cured olives, pitted and chopped
  • 1/4 cup golden raisins
  • 2 tablespoons capers, rinsed and drained
  • Salt and freshly ground black pepper, to taste

 

INSTRUCTIONS:

  1. Prepare the Pressure Cooker: Begin by setting up your pressure cooker. Add all the ingredients, except for the salt and pepper, into the pressure cooker pot. This includes the olive oil, white wine, red wine vinegar, ground cinnamon, diced eggplant, diced onion, diced green bell pepper, diced red bell pepper, minced garlic, diced tomatoes, diced celery, pitted and chopped olives, golden raisins, and capers.
  2. Mix and Lock the Lid: Give the mixture a good stir to ensure that all the ingredients are well combined. Once mixed, lock the lid of the pressure cooker into place.
  3. Bring to Low Pressure: Place the pressure cooker on the stovetop and heat it until it reaches low pressure. Once it has achieved low pressure, maintain this pressure for 8 minutes.
  4. Release Pressure and Season: After the cooking time has elapsed, carefully remove the pressure cooker from the heat source and proceed to quick-release the pressure. Unlock the lid and take a moment to stir the contents of the pressure cooker. Now, it’s time to taste your creation. Season your Eggplant Caponata with salt and freshly ground black pepper to achieve the desired flavor balance.
