Cooking Time: 30 minutes

Serving Size: 6

INGREDIENTS:

  • 5 large eggs, beaten
  • 1 teaspoon sesame oil
  • 5 tablespoons green onions
  • ¼ cup cornstarch
  • 1 can of corn
  • 1 can of creamed corn
  • 1 tablespoon soy sauce
  • 1 cup carrots
  • 7 cups chicken broth (or vegetable stock)
  • Pepper, to taste
  • 1 tablespoon sriracha sauce
  • 2.5 cups cooked chicken
  • 1-2 teaspoons ginger powder
  • Salt, to taste
  • 1-2 teaspoons garlic powder

INSTRUCTIONS:

  1. Prepare the Broth: In a large nonstick pan, bring the chicken broth (or vegetable stock), cooked chicken, ginger powder, garlic powder, salt, soy sauce, Sriracha sauce, sesame oil, diced vegetables, canned corn, and creamed corn to a boil over medium heat.
  2. Simmer and Cook: Reduce the heat to medium-low and allow the soup to simmer for an additional 8-10 minutes, or until the carrots become tender.
  3. Thicken the Soup: Mix in the diluted cornstarch slurry. As the soup cooks, it will naturally thicken.
  4. Add Beaten Eggs: Slowly pour in the beaten eggs while gently stirring. This will create beautiful ribbons of cooked egg throughout the soup.
  5. Final Touch: Stir in the remaining three tablespoons of green onions and sesame oil.
  6. Serve Immediately: Turn off the heat and serve your delicious Sweet Corn Soup right away, enjoying the delightful combination of flavors and textures.

TIPS:

  • Fresh Corn vs. Canned Corn: While this recipe uses canned corn, you can elevate the flavor by using fresh corn when it’s in season. Simply cut the kernels from the cob and add them to the soup.
  • Adjust the Heat: The amount of Sriracha sauce can be adjusted to your spice preference. Start with a small amount and add more if you prefer a spicier soup.
  • Creaminess: For a creamier texture, you can add a touch of heavy cream or coconut milk towards the end of cooking.
  • Garnish: Consider garnishing your sweet corn soup with additional chopped green onions, fresh cilantro, or a sprinkle of toasted sesame seeds for added flavor and presentation.
  • Protein Options: While this recipe includes chicken, you can customize it by adding shrimp, tofu, or even omitting the protein for a vegetarian version.
  • Vegetable Choices: Feel free to experiment with other vegetables like peas, bell peppers, or mushrooms to add variety and color to your soup.

This versatile soup can be customized to suit your taste preferences. Whether enjoyed as a starter or a light meal, this sweet corn soup is sure to satisfy your palate with its comforting and delicious goodness.
