INGREDIENTS:

  • Nip of rum or whisky
  • 75g chocolate cake crumbs
  • 60g glace cherries
  • 75g raisins
  • 250g dark chocolate
  • 500g packet of digestives – crushed or blitzed in a food processor
  • 1 tbsp cocoa
  • 55g caster sugar
  • 2 tbsp golden syrup
  • 2 tbsp milk
  • 2 tbsp drinking chocolate
  • 250g butter

INSTRUCTIONS:

  1. This recipe is delicious and incredibly easy to make since it doesn’t require an oven. The main effort lies in measuring out the ingredients. Another advantage is that the cake stays fresh for several days when stored in an airtight tin.
  2. Begin by melting the butter, sugar, milk, and golden syrup together over gentle heat in a large saucepan. Once the sugar has dissolved, add the cocoa and drinking chocolate, followed by half of the crushed biscuits.
  3. Mix the ingredients thoroughly before adding in all the remaining ingredients, except for the dark chocolate. Press the mixture firmly into a 20cm/8-inch square tin.
  4. Proceed to melt the dark chocolate over a pan of boiling water. Once melted, spread it evenly over the biscuit base and allow it to set. This recipe should yield around 30 small bars that are absolutely delicious!

SERVING SUGGESTIONS:

  • Whipped Cream: Serve a dollop of freshly whipped cream on the side of each cake slice. The light and creamy texture of the whipped cream complements the rich and fudgy chocolate flavors.
  • Fresh Berries: Add a pop of freshness by garnishing the cake with a handful of fresh berries such as strawberries, raspberries, or blueberries. The bright flavors and vibrant colors of the berries provide a lovely contrast to the chocolatey goodness.
  • Vanilla Ice Cream: Serve a scoop of creamy vanilla ice cream alongside each slice of the cake. The cold and smooth ice cream pairs beautifully with the rich and dense fudge cake, creating a delightful combination of temperatures and textures.
  • Chocolate Sauce: Drizzle some warm chocolate sauce over the cake slices for an extra touch of indulgence. The sauce will add an extra layer of chocolate flavor and create a visually appealing presentation.
  • Coffee or Espresso: Enjoy a cup of coffee or a shot of espresso alongside the cake. The rich and bold flavors of coffee provide a pleasant contrast to the sweetness of the chocolate, creating a harmonious pairing.
  • Dusting of Cocoa Powder: Before serving, dust a light layer of cocoa powder over the top of the cake. It adds a touch of elegance and intensifies the chocolate flavors.
