- 1 1/2in (4cm) piece of ginger, peeled and grated
- 1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- 2 tbsp basmati rice
- 3/4 tsp turmeric
- 1/2 tsp garam masala
- 1 quart (1 liter) hot vegetable stock
- 1 tbsp palm sugar
- Grated zest and juice of 1 large lemon
- Salt and freshly ground black pepper
- 2 tbsp cilantro, coarsely chopped
INSTRUCTIONS:
- Heat the vegetable oil in a large saucepan over medium heat. Add the star anise, hot red pepper flakes, nigella seeds, fennel seeds, and fenugreek seeds. Stir-fry the spices for about 30 seconds until aromatic. Reduce the heat, then add the diced onions and grated ginger. Cover the pan and cook for 5 minutes, or until the onions are softened. Stir in the diced bell peppers and fry for an additional 2-3 minutes.
- Add the basmati rice, turmeric, and garam masala to the pan. Stir well and cook for about 1 minute. Pour in the hot vegetable stock, then add the palm sugar and lemon zest. Season the mixture with salt and freshly ground black pepper. Allow the soup to simmer for approximately 15 minutes, or until it thickens slightly and the peppers and rice become tender.
