Crockpot Brunswick Stew

INGREDIENTS:

  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 3 cups diced cooked chicken
  • 1 package frozen succotash or sliced okra or lima beans (10 ounces), thawed
  • 1 cup chopped onion
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon dried crumbled rosemary
  • 1/2 teaspoon pepper
  • Dash ground cloves
  • 2 1/2 cups chicken broth

PREPARATION:

  1. In a slow cooker, combine undrained tomatoes and tomato paste. Add chicken, frozen succotash or sliced okra, onion, bay leaf, salt, rosemary, pepper, and cloves. Stir in chicken broth.
  2. Cover and cook on low heat setting for 5 to 6 hours.
  3. Before serving, remove bay leaf and stir.
  4. Makes 6 servings
