Preparation Time: 20 Minutes

Cook Time: 8 Minutes

Servings: 4

INGREDIENTS:

  • Cilantro Chutney
  • 2¾ cups diced potato, cooked until tender
  • 2 teaspoons oil (coconut, sunflower, or safflower)
  • 3 large garlic cloves, minced or pressed
  • 1½ tablespoons fresh lime juice
  • 1½ teaspoons cumin powder
  • 1 teaspoon onion granules
  • 1 teaspoon coriander powder
  • ½ teaspoon sea salt
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne powder
  • 4 large flour tortillas, preferably whole grain or sprouted
  • 1 cup cooked garbanzo beans (canned are fine), rinsed and drained
  • ½ cup finely chopped cabbage
  • ¼ cup minced red onion or scallion
  • Cooking oil spray (sunflower, safflower, or refined coconut)

INSTRUCTIONS:

  1. Cilantro Chutney: Begin by preparing the Cilantro Chutney and setting it aside for later use.
  2. Prepare Potato Filling: In a large bowl, mash the cooked potatoes thoroughly using a potato masher or a large fork. Add the oil, minced garlic, fresh lime juice, cumin powder, onion granules, coriander powder, sea salt, turmeric, and cayenne. Mix well until all the spices are evenly incorporated. Set aside.
  3. Assemble the Wraps: Lay the tortillas flat on the counter. In the center of each tortilla, distribute the prepared potato filling evenly. Add garbanzo beans, chopped cabbage, and minced red onion or scallion on top of the potato mixture.
  4. Fold and Enclose: Lightly spray the air fryer basket with cooking oil and set it aside. Fold the bottom of each tortilla up and over the filling, then fold in the sides, and finally roll up from the bottom to create an enclosed burrito-like wrap.
  5. Air Frying: Place the wraps seam side down in the air fryer basket. If needed, cook them in batches to avoid overcrowding. Air fry at 375°F (190°C) for 5 minutes. Afterward, spray the wraps with oil, flip them over, and continue to air fry for an additional 2 to 3 minutes until they turn golden brown and crispy.
  6. Serve: Once cooked, serve the wraps hot, topped generously with the prepared Cilantro Chutney.

TIPS:

  • Tortilla Selection: Opt for whole-grain or sprouted tortillas that are more pliable and less likely to break during wrapping. Alvarado Street Bakery brand is recommended for its sturdiness.
  • Air Fryer Efficiency: If your air fryer has limited space, ensure the wraps are not overcrowded in the basket. This allows for even cooking and a crispy texture.
  • Customization: Feel free to customize the filling by adding other vegetables, sauces, or condiments of your choice to enhance the taste and texture of the wraps.
  • Cilantro Chutney Freshness: Prepare the Cilantro Chutney just before assembling the wraps to preserve its vibrant color and flavor.
  • Garnish Creativity: Consider adding toppings like chopped tomatoes, shredded lettuce, or a drizzle of yogurt for added freshness and creaminess.
