- 5 cups (1.2 liters) hot vegetable stock
- 2 tsp fresh thyme leaves
- 1 bay leaf
- Pinch of grated nutmeg
- Salt and freshly ground black pepper
- 3 tbsp light cream
- 3 tbsp milk
- Bunch of chives, snipped, to garnish

- In a large pan, melt the butter over medium heat.
- Add the sliced carrots, leek, parsnips, onion, turnip, celery, and potato to the pan.
- Stir to coat the vegetables well with the butter.
