MAKES: ABOUT 3 CUPS

 

INGREDIENTS:

  • 12-ounce package fresh cranberries
  • 1 cup granulated sugar
  • 1 medium orange, peeled and white pith removed, chopped
  • ¼ cup water
  • 3 tablespoons minced shallots
  • 1 teaspoon ground dried ginger
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon ground dried mild to medium red chile, such as New Mexican
  • ¾ teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon salt
  • 4 ounces dried figs, preferably Mission, chopped
  • ⅓ cup unsalted pistachios, chopped

 

INSTRUCTIONS:

  1. In a saucepan, combine the cranberries, sugar, chopped orange, water, minced shallots, ground dried ginger, yellow mustard seeds, ground dried red chile, ground cumin, ground cinnamon, and salt.
  2. Cook the mixture over medium-high heat, stirring occasionally, until the sugar dissolves and the cranberries pop and thicken. This will take about 10 to 15 minutes.
  3. Stir in the chopped figs and pistachios, and then remove the saucepan from the heat.
  4. Let the cranberry chutney cool, and then refrigerate it in a covered container for at least 1 hour or up to several weeks. If it becomes too thick, you can add a little water to achieve the desired consistency.
  5. Serve the chilled cranberry chutney at the table with pork as a delightful and tangy accompaniment.

 

VARIATIONS:

  • Citrus Zest: Enhance the citrusy notes by adding a tablespoon of finely grated orange or lemon zest to the relish. The bright citrus flavors will complement the cranberries and figs beautifully.
