INGREDIENTS:
- 2 cups half-and-half
- 1 cup heavy cream
- 1/4 cup Splenda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 6 eggs
- 1 cup water
- Nutmeg
INSTRUCTIONS:
- In a big glass measuring cup, combine the half-and-half and cream. Microwave the mixture at 70 percent power for 3 to 4 minutes, or until it is very warm but not boiling. Alternatively, you can heat the half-and-half and cream over a low flame in a saucepan if preferred.
- Pour the heated half-and-half mixture into a heavy-bottomed saucepan. Whisk in the Splenda, vanilla, salt, and eggs. Turn the heat to the lowest setting (you can use a heat diffuser or double boiler if available). Stir the mixture constantly until it thickens enough to coat a metal spoon with a thin film. This process will take approximately 5 to 20 minutes.
- Stir in the water and then chill the eggnog mixture. When serving, sprinkle a little nutmeg on each serving. If desired, you can also add a spike of alcohol for extra flavor.
