Coconut Banana Cream Popsicles

YIELD: 16 popsicles

INGREDIENTS:

  • 1 can (14 ounces) unsweetened coconut milk
  • 1 cup plain yogurt
  • 1 cup Splenda
  • 2/3 cup heavy cream
  • 1 medium banana (sliced)
  • 1/2 teaspoon banana or vanilla extract.

 

INSTRUCTIONS:

  1. In a blender, blend all the ingredients until smooth.
  2. Pour into popsicle molds and freeze.

 

PER SERVING:

  • Each with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 1 gram of protein.
