MAKES: ABOUT ¾ CUP
INGREDIENTS:
- ¼ cup kosher salt or coarse sea salt
- 2 tablespoons garlic salt
- 2 tablespoons dried mustard powder
- 2 tablespoons crumbled dried thyme
- 2 tablespoons dried lemon zest
- 2 tablespoons freshly ground black pepper
- 2 teaspoons ground cayenne
INSTRUCTIONS:
- Mix all of the ingredients well in a small bowl.
- Sprinkle the rub generously on chicken, massaging it over and under the skin. Allow the seasoned poultry to sit for at least 30 minutes at room temperature, or up to 8 hours wrapped or covered in the refrigerator, prior to cooking.
- Store any remaining rub in a covered container in a cool, dark pantry for up to several months.
SPICING TIP:
- Loosen up. One of the best tips we can give you for flavoring skin-on poultry is to take the time to loosen the skin so that your chosen flavoring can go both over and under the skin. Look for a loose edge and then carefully wriggle a finger, or several, in and then back and forth to pull more skin away from the meat of the poultry. If you are working with individual pieces of chicken, leave the skin attached at an edge or two so that it doesn’t pull completely free. For a whole chicken, also rub the seasoning inside the bird’s cavities, into all the nooks.
