Cilantro Lime Ranch Dressing

PREP TIME: 5 minutes, plus 2 hours to chill

YIELD: 2 cups (2 tablespoons per serving)

INGREDIENTS:

  • 1 (8-ounce) package cream cheese (or dairy-free cream cheese-style spread), softened (Kite Hill brand if dairy-free)
  • 3/4 cup chicken or beef bone broth, homemade or store-bought (or more if needed)
  • 1/2 cup fresh cilantro leaves and stems
  • 1/4 cup lime juice
  • 1/2 teaspoon dried chives
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon ground black pepper

 

INSTRUCTIONS:

  1. Place all the ingredients in a blender or food processor.
  2. Puree the ingredients until smooth and well combined.
  3. Cover the dressing and refrigerate for 2 hours before serving. It will thicken as it rests. If the dressing is too thick, you can add more broth to thin it out.
  4. Store the dressing in a jar in the refrigerator for up to 1 week.
