MAKES: ABOUT 2 CUPS

 

INGREDIENTS:

  • 1 medium cucumber
  • 4 ounces tomatillos, chopped
  • 1 or 2 fresh jalapeños, seeded and chopped
  • Juice of ½ lime
  • 1 tablespoon vegetable oil or sunflower oil
  • 2 to 3 tablespoons minced fresh cilantro
  • Kosher salt or coarse sea salt

 

INSTRUCTIONS:

  1. Peel the cucumber and halve it lengthwise. Scoop out the watery center with a spoon and discard it. Chop the cucumber.
  2. Mix the chopped cucumber, tomatillos, chopped jalapeños, lime juice, and vegetable oil in a bowl.
  3. Stir in the minced cilantro and season with salt to taste.
  4. Serve the cucumber and tomatillo salsa at room temperature with smoked or grilled pork.
