INGREDIENTS

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3-4 tablespoons ice water

 

For the Chocolate Filling:

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 4 ounces semisweet chocolate, finely chopped

 

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

 

INSTRUCTIONS

For the Pie Crust:

  1. In a food processor, combine the flour and salt. Pulse a few times to mix.
  2. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, pulsing until the dough starts to come together.
  4. Turn the dough out onto a floured surface, form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. Roll out the dough on a floured surface to fit a 9-inch pie dish. Press the dough into the dish, trim any excess, and crimp the edges.
  7. Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes. Remove the weights and parchment, then bake for an additional 10-15 minutes or until the crust is golden. Allow it to cool completely.

 

For the Chocolate Filling:

  1. In a medium-sized saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. In a separate bowl, whisk together the egg yolks and milk.
  3. Gradually whisk the milk mixture into the dry ingredients in the saucepan.
  4. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
  5. Remove from heat and stir in the chopped chocolate, butter, and vanilla extract until smooth.
  6. Pour the chocolate filling into the cooled pie crust.
  7. Place plastic wrap directly on the surface of the filling to prevent a skin from forming, and refrigerate for at least 4 hours or until set.

 

For the Whipped Cream Topping:

  1. In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.
  2. Whip the cream until stiff peaks form.
  3. Spread or pipe the whipped cream onto the chilled chocolate filling.
  4. Optionally, garnish with chocolate shavings or cocoa powder.
