INGREDIENTS:

  • 3 ounces country ham or prosciutto
  • 1 ounce dried shrimp
  • 1 ounce dried scallops or additional dried shrimp
  • 4 garlic cloves
  • 1 jalapeño or serrano chile, seeded
  • 1 scallion, limp greens removed, cut into several pieces
  • Walnut-size nugget of fresh ginger
  • 1 cup peanut oil, preferably, or vegetable oil
  • 2 tablespoons soy sauce
  • 2 teaspoons Asian sesame oil

 

INSTRUCTIONS:

  1. In a food processor, combine the country ham, dried shrimp, dried scallops (or additional dried shrimp), garlic cloves, seeded chile, scallion, and ginger. Process the mixture until finely chopped and well combined.
  2. In a medium-sized skillet, warm the peanut oil (or vegetable oil) over medium-low heat. Carefully add the chopped ginger mixture to the skillet and fry it until it becomes deeply browned, which takes about 15 minutes. Remove the skillet from the heat and allow it to sit for several minutes to cool down.
  3. Stir in the soy sauce and Asian sesame oil, thoroughly blending the flavors. Allow the sauce to cool completely, then refrigerate it for at least 8 hours to allow the flavors to meld.
  4. You can use the Chinese XO Sauce both cool and hot, depending on your preference. Drizzle it lightly over fish or shellfish to add an extra layer of complexity and richness.
  5. Store the sauce in a covered container in the refrigerator for up to 2 months, ensuring its freshness and maintaining its vibrant flavors.
