Chili’s Southwestern Eggrolls

This recipe has an assortment of traditional Southwestern-style ingredients wrapped inside small tortillas and deep fried.

Chili’s Southwestern Eggrolls are a popular appetizer known for their delicious blend of flavors and crispy texture. These eggrolls are inspired by Southwestern cuisine, combining ingredients like black beans, corn, spinach, jalapeños, and cheese to create a mouthwatering filling. The addition of garlic, cilantro, onion, chili powder, salt, and pepper adds depth and a hint of spice to the mixture. The filling is then rolled in small whole-wheat tortillas and lightly fried to achieve a golden and crispy exterior.

The result is a delightful combination of crunchy and savory, with a satisfying burst of flavors in every bite. The black beans and corn provide a hearty and nutritious base, while the spinach adds a touch of freshness. The jalapeños offer a pleasant kick of heat, and the Mexican cheese blend brings a creamy and cheesy element to the dish. The use of whole-wheat tortillas adds a healthier twist to the traditional eggroll, making them a great option for those looking for a wholesome appetizer.

Chili’s Southwestern Eggrolls are typically served hot, straight from the frying pan. They are often accompanied by a side of prepared salsa and sour cream, which enhance the flavors and provide a cooling contrast to the spiciness. These eggrolls are perfect for sharing with friends and family, whether as an appetizer before a main course or as a standalone snack during gatherings or parties. Their combination of bold flavors, satisfying crunch, and Southwestern flair makes them a crowd-pleasing favorite at Chili’s and beyond.

SERVES: 15

INGREDIENTS:

  • 1 (16-ounce) can rinsed and drained black beans
  • 1 (16-ounce) can drained corn
  • 2 cups washed and drained fresh spinach
  • 2 chopped jalapeños
  • 2 pressed garlic cloves
  • ¼ cup chopped fresh cilantro
  • ¼ cup minced onion
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • 2 cups grated Mexican cheese blend
  • 15 small whole-wheat tortillas
  • Cooking oil
  • Prepared salsa
  • Sour cream

INSTRUCTIONS:

  1. In a large mixing bowl, combine the rinsed and drained black beans, drained corn, washed and drained fresh spinach, chopped jalapeños, pressed garlic cloves, chopped fresh cilantro, minced onion, chili powder, salt, pepper, and grated Mexican cheese blend. Mix well to ensure all ingredients are evenly distributed.
  2. Put approximately 2 tablespoons of the mixture on each small whole-wheat tortilla and roll it into a thin eggroll shape.
  3. Heat a frying pan over medium-high heat.
  4. Add 1 tablespoon of cooking oil to the pan for every 2-3 eggrolls. Allow the oil to heat up.
  5. Shallow fry the rolled eggrolls in the sauté pan until they become crispy and golden brown on all sides. Flip them occasionally to ensure even cooking.
  6. Once cooked, remove the eggrolls from the pan and transfer them to a plate lined with paper towels to absorb any excess oil.
  7. Serve the eggrolls hot and garnish them with prepared salsa and sour cream.

VARIATIONS:

  1. Protein Variations: You can add or substitute different proteins to the filling, such as cooked and shredded chicken, ground beef, or diced grilled shrimp. This will add extra texture and flavor to the eggrolls.
  2. Vegetarian Option: If you prefer a vegetarian version, you can omit the meat and focus on incorporating a variety of vegetables. Consider adding diced bell peppers, zucchini, or mushrooms to the filling for added taste and texture.
  3. Cheese Options: While the recipe calls for a Mexican cheese blend, you can experiment with different types of cheese. Try using cheddar, pepper jack, or a combination of cheeses to create unique flavor profiles.
  4. Spicy Twist: If you enjoy spicy food, you can kick up the heat by adding additional jalapeños or incorporating other spicy ingredients like chipotle peppers in adobo sauce or crushed red pepper flakes.
  5. Dipping Sauces: While the recipe suggests serving the eggrolls with salsa and sour cream, you can experiment with different dipping sauces to complement the flavors. Consider offering options like avocado ranch, chipotle mayo, or a tangy cilantro lime sauce.
  6. Baked Option: If you prefer a healthier alternative to frying, you can try baking the eggrolls instead. Brush them with a little oil and bake in a preheated oven until they turn golden brown and crispy.
