INGREDIENTS:

Sunny Citrus Dressing:

  • 1 cup first cold-pressed extra virgin olive oil
  • ⅓ cup red wine vinegar
  • 2 tablespoons all-natural orange marmalade
  • 1 teaspoon dry mustard
  • 1 teaspoon ground black pepper

California Chicken:

  • 4 large chicken tenders
  • 1 teaspoon olive oil
  • Juice of 1 small orange or clementine
  • Salt and pepper to taste
  • ½ teaspoon rosemary

Salad:

  • 8 cups romaine or leaf lettuce, chopped or torn into bite-size pieces
  • 2 clementines or small oranges, peeled and sectioned
  • ½ cup dried cranberries
  • 4 tablespoons sliced almonds

INSTRUCTIONS:

  1. In a 2-cup jar or container with a lid, combine all the Sunny Citrus Dressing ingredients. Shake vigorously to achieve a well-blended consistency. Refrigerate for at least 30 minutes to allow the flavors to meld.
  2. Lightly brush the chicken tenders with olive oil.
  3. Drizzle the chicken with the juice of the small orange or clementine.
  4. Season the chicken with salt and pepper to your taste preference.
  5. Crush the rosemary and evenly sprinkle it over the chicken.
  6. Preheat your oven to 390°F (200°C). Cook the chicken for 3 minutes, then turn over and cook for an additional 3 to 5 minutes until the chicken is tender and the juices run clear.
  7. Once ready to serve, coat the lettuce with 2 tablespoons of the Sunny Citrus Dressing.
  8. Divide the lettuce among 4 plates or bowls. Arrange the cooked chicken and clementine sections on top. Sprinkle the salad with dried cranberries and sliced almonds. For extra flavor, offer additional dressing at the table.
