Homemade seitan is one of our favorite go-to meat substitutes, and it works perfectly in these vegan pita sandwiches. The Steamed Seitan, Tofu “Bacon”, avocado and Ranch Dressing make for a delicious combination. Serve these pitas with our Fries (Baked or Fried) or White Jackfruit Chili.

The Chicken Bacon Ranch Pita is a mouthwatering and satisfying sandwich that combines a medley of flavors and textures. It’s a delightful fusion of crispy seitan or vegan chicken, smoky “bacon” bits, creamy avocado slices, and the rich, tangy goodness of vegan ranch dressing, all enclosed in a soft pita pocket.

The seitan or vegan chicken strips provide a hearty and protein-packed base with a satisfying chewiness. They are lightly crisped up in a skillet, adding a nice contrast in texture to the sandwich.

The “bacon” bits, whether homemade or store-bought, infuse the pita with a smoky, savory essence that’s reminiscent of traditional bacon. They deliver a delightful crunch that enhances the overall experience.

YIELD: 6 pitas

 

INGREDIENTS:

  • 1 batch Steamed Seitan or 1 (14-oz [396-g]) bag store-bought vegan chicken strips (gluten-free and/or soy-free if needed)
  • 1 tbsp (15 ml) olive oil
  • 12 slices Tofu “Bacon” or store-bought alternative, chopped (gluten-free and/or soy-free if needed)
  • 3 medium-sized ripe avocados, peeled, pitted, and sliced
  • 6 vegan pitas (gluten-free if needed)
  • Shredded iceberg lettuce, for serving
  • Vegan Ranch Dressing or store-bought, for serving (nut-free and/or soy-free if needed)

 

INSTRUCTIONS:

  1. Prepare the Seitan (if making from scratch): Slice the Steamed Seitan into strips that are ½ inch (1.3 cm) thick and 1 to 2 inches (2.5 to 5 cm) long.
  2. Sauté the Seitan and “Bacon”: In a large skillet, heat the oil over medium heat. Add the seitan and cook, stirring occasionally, for 2 to 3 minutes, or until lightly crispy. Add the chopped “bacon” to the pan and cook, stirring often, for another 2 to 3 minutes, or until crispy.
  3. Assemble the Pitas: Lay out the 6 vegan pitas. Down the center of each pita, add an even amount of seitan, “bacon,” and avocado slices.
  4. Add Lettuce and Dressing: Top each pita with your desired amount of shredded lettuce and vegan ranch dressing.
  5. Serve: Serve the pitas immediately, and enjoy your delicious and satisfying sandwich!
