  • 1 pound zucchini
  • 1/2 cup chopped green onion (spring onion)
  • 1 small yellow onion, grated
  • 1/2 cup fresh dill, chopped

  • 1/2 cup grated Kasseri cheese or 1/2 cup crumbled feta cheese
  • 4 eggs, slightly beaten
  • 1 cup all-purpose flour

  1. Grate the Zucchini: Start by finely grating the zucchini. After grating, place it in a fine mesh sieve.
  2. Season and Drain the Zucchini: Season the grated zucchini with a pinch of salt and set it aside for about 30 minutes. This allows the excess water in the zucchini to drain away.
  3. Squeeze Out the Water: After the resting period, take handfuls of the grated zucchini and squeeze out the excess water. You can use kitchen towels to help with this process. Once the zucchini is dry, set it aside.
  4. Combine Ingredients: In a mixing bowl, combine the grated zucchini with chopped green onions, grated yellow onion, fresh dill, fresh parsley, cheese, beaten eggs, and all-purpose flour. Season with a pinch of salt and freshly ground pepper. Mix until all the ingredients are well combined.
