These crisp and melt-in-your-mouth shortbreads are the perfect snack for any occasion. The dough can be prepared in advance, making these puffs convenient for parties or entertaining guests. With a variety of flavor variations to explore, these cheese puffs are sure to become a crowd-pleasing favorite.

MAKES: 30 to 40 puffs

TIME: 30 minutes

INGREDIENTS:

  • 8 tablespoons (1 stick) cold butter, cubed
  • 2 cups grated Emmental, Gruyère, cheddar, or other semihard cheese
  • 1 1/2 cups all-purpose flour
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1 tablespoon paprika or ground cumin (optional)

INSTRUCTIONS:

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine the cold butter, grated cheese, all-purpose flour, beaten egg, salt, cayenne, and paprika or ground cumin (if using). Pulse the mixture until it resembles a coarse meal. Be careful not to overprocess the dough. Alternatively, you can use a pastry cutter or a fork to achieve the same consistency in a bowl.
  3. Wrap the dough in plastic wrap and refrigerate it until you are ready to bake the puffs.
  4. Take the chilled dough and shape it into 1-inch balls. Place the balls on a lightly greased or parchment-lined baking sheet, ensuring there is about 2 inches of space between each ball. Slightly flatten each ball with your fingers.
  5. Bake the puffs in the preheated oven for approximately 10 minutes, or until they have puffed up and turned golden brown.
  6. Allow the puffs to cool completely on a wire rack. Once cooled, sprinkle them with additional paprika (if desired) and serve.

FLAVOUR VARIATIONS:

  • Blue Cheese Shortbread: Substitute 1 cup of crumbled blue cheese for 1 cup of the Emmental cheese.
  • Pecorino Cheese Shortbread: Substitute 1 cup each of grated pecorino Romano and Parmesan cheese for the Emmental.
  • Herbed Cheese Shortbread: Add 1/4 cup of chopped mixed fresh herbs, such as parsley, chives, dill, and/or basil, along with a touch of tarragon.
  • Spiced Cheese Shortbread: Use 2 to 3 teaspoons of garam masala or Hot Curry Powder for an Indian-inspired twist, caraway for an Eastern European flavor, or toasted cumin seeds for a North African influence.
  • Prosciutto Shortbread: Reduce the cheese to 1 cup and finely grate Parmesan cheese. Chop several thin slices of prosciutto into pieces and add them to the food processor in Step 1.

These flavor variations allow you to tailor the cheese puffs to your taste preferences or match them with different culinary themes. Experiment with different combinations and discover your favorite variation.

TIPS:

  • Ensure that the butter is cold when making the dough for the cheese puffs. This will help create a flaky and light texture.
  • Grate the cheese fresh for the best flavor and texture. Pre-packaged grated cheese may not melt as well or provide the same depth of flavor.
  • Experiment with different types of cheese to customize the flavor of your cheese puffs. Emmental, Gruyère, cheddar, and other semi-hard cheeses work well, but feel free to try your favorite varieties.
  • If you prefer a milder or spicier taste, adjust the amount of cayenne pepper used in the recipe.
  • When shaping the dough into balls, try to make them as uniform in size as possible. This will ensure even baking and consistent results.
  • Use a baking sheet lined with parchment paper or lightly greased to prevent the cheese puffs from sticking.
  • Don’t overbake the puffs. Keep a close eye on them as they bake to ensure they are golden brown and cooked through without becoming too crispy.
  • Let the cheese puffs cool completely on a wire rack before serving. This will allow them to firm up and maintain their shape.
  • Store the cheese puffs in an airtight container once they have cooled completely. They can be kept at room temperature for a few days, but for optimal freshness, enjoy them within the first day or two.
  • Serve the cheese puffs as an appetizer, party snack, or alongside soups and salads for a flavorful addition to your meal. They also make a delightful accompaniment to wine or as a standalone indulgence.
