INGREDIENTS:

  • 4 egg yolks, from large-sized eggs
  • 14 tablespoons (200 grams) butter, at room temperature
  • 1 cup (230 grams) water
  • 1⅓ cups (170 grams) confectioners’ sugar

 

INSTRUCTIONS:

  1. In a mixing bowl or the bowl of a standing mixer, ensure that the egg yolks are ready. Also, make sure the butter is at room temperature. In a small saucepan, add the water, and then add the confectioners’ sugar. Heat the mixture to 238°F (114°C) using a candy thermometer to check the temperature.
  2. Once the sugar syrup reaches the soft ball stage, slowly pour it over the egg yolks while continuously whisking. You can whisk by hand or use the whisk attachment of the mixer. Continue whisking until the mixture cools down. You can test the temperature by feeling the bottom of the bowl; it should be cool to the touch.
  3. Incorporate the butter into the mixture 1 to 2 tablespoons at a time, making sure to blend well after each addition. If the mixture appears to break or separate, don’t worry, keep mixing, and it will come back together. Add coffee extract to taste, approximately 2 to 3 teaspoons, until the buttercream achieves a rich coffee color and a delightful coffee taste.

 

TIPS:

  • Butter at Room Temperature: Before starting, ensure that the butter is at room temperature. Softened butter makes the mixing process smoother and ensures a creamy and smooth buttercream.
  • Consistency Check: Use a candy thermometer to precisely heat the water and sugar to 238°F, which is the soft ball stage. This temperature is crucial for the correct texture of the buttercream.
