INGREDIENTS:

  • 1 garlic clove, halved
  • 2 cups dry white wine
  • 3/4 pound Emmentaler (Swiss) cheese, shredded (3 cups)
  • 3/4 pound Gruyère cheese, shredded (3 cups)
  • 1 tablespoon cornstarch
  • 2 tablespoons kirsch
  • Assorted steamed vegetables such as carrot sticks, broccoli, cauliflower, and green beans
  • Cubes of French bread

 

INSTRUCTIONS:

  1. Prepare the Fondue Pot: Rub the inside of a medium saucepot with the cut side of the garlic. Discard the clove, or leave it in.
  2. Heat the Wine: Add the white wine to the saucepot and cook over medium heat until it simmers.
  3. Melt the Cheese: Whisk in the shredded Emmentaler and Gruyère cheeses in small handfuls. Make sure each addition has completely melted before adding the next.
  4. Create Cornstarch Paste: In a small bowl, combine the cornstarch and kirsch to create a paste.
  5. Thicken the Cheese Mixture: Whisk the cornstarch paste into the cheese mixture. Allow the fondue to simmer gently for 5–7 minutes, which will help thicken it.
  6. Transfer to Fondue Pot: Transfer the thickened cheese mixture to a fondue pot.
  7. Heat Under Low Flame: Set a low flame under the fondue pot, just enough to keep the cheese mixture at a simmering temperature.
  8. Serve: Assemble a platter with assorted steamed vegetables and cubes of French bread. Provide long fondue forks or wooden skewers for dipping.
  9. Enjoy: Dip the vegetables and bread cubes into the molten cheese and enjoy your cheese fondue!
