INGREDIENTS:
- 8 fresh serrano chiles
- 1 fresh mild green chile, such as New Mexican or poblano
- 1 cup white vinegar
- ½ cup water
- 2 tablespoons shelled pumpkin seeds (pepitas)
- 2 tablespoons minced onion
- 4 garlic cloves
- 1½ teaspoons kosher salt or coarse sea salt
INSTRUCTIONS:
- Char the Chiles: Begin by charring 4 of the serrano chiles and the mild green chile. You can do this over a stovetop burner or a hot grill. Turn the chiles to blacken them on all sides. Once charred, allow them to cool slightly. Remove the stems and seeds from the chiles, but leave the blackened peel on. Also, remove the stems and seeds from the 4 uncharred serrano chiles.
- Blend the Ingredients: In a blender, combine all the chiles, both charred and uncharred, with the rest of the ingredients, including white vinegar, water, shelled pumpkin seeds, minced onion, garlic cloves, and kosher salt. Blend the mixture until it becomes a smooth sauce, which should take about 2 minutes.
