INGREDIENTS:

For Making Quick Chakli:

  • 2 cups Bhajani Flour
  • ½ cup Water
  • ¼ cup Hot Water
  • ¼ cup Oil (for the dough)
  • ¼ teaspoon Turmeric
  • 1.5 teaspoons Ajwain (Carom Seeds)
  • 2 tablespoons Sesame Seeds
  • 1 tablespoon Red Chili Powder
  • 2 teaspoons Kosher Salt
  • Oil for frying

 

INSTRUCTIONS:

Preparing Quick Chakli:

  1. In a mixing bowl, start by adding the Bhajani flour.
  2. Pour in ¼ cup of warm oil and ¼ cup of warm water into the bowl.
  3. In a separate bowl, combine red chili powder, ajwain, sesame seeds, fenugreek, salt, and kosher salt. Mix them together using a spoon.
  4. Gradually add ice water to the flour mixture while kneading the dough. Continue kneading until you have a soft and smooth pastry.
  5. Heat oil in a deep fryer or skillet over low heat.
  6. As the oil heats up, prepare the chakli press and place the chakli disk with the circular pattern in the center.
  7. Carefully drop chakli into the hot oil one at a time, making sure not to overcrowd the frying pan.
  8. Fry the chakli on medium to low heat for about three minutes on each side, or until they turn light brown.
  9. Before adding the next batch of chakli, make sure to adjust the oil’s heat if necessary. You want to maintain a consistent frying temperature.

  • When using the chakli press, make sure to secure the circular pattern disk in the center for achieving the classic spiral shape.
