INGREDIENTS: Roasted Tomatoes:

  • 2 medium Tomatoes, Cut into 1/4″ Slices
  • 1/4 cup Olive Oil
  • Salt & Pepper to Taste

Tart Base:

  • 1/2 cup Almond Flour
  • 1 tbsp. Psyllium Husk
  • 2 tbsp. Coconut Flour
  • 5 tbsp. Cold Butter, Cubed
  • 1/4 tsp. Salt

Tart Filling:

  • 1/2 medium Onion, Sliced Thin
  • 3 oz. Goat Cheese
  • 2 tbsp. Olive Oil
  • 2 tsp. Minced Garlic
  • 3 tsp. fresh Thyme

 

INSTRUCTIONS:

  1. Preheat the oven to 435 degrees.
  2. Slice the tomatoes into 1/4-inch thick slices and drizzle with olive oil. Sprinkle with salt and pepper.
  3. Poke holes in the tomatoes to reduce steaming.
  4. Roast the tomatoes in the oven for 30-40 minutes.
  5. Preheat the oven to 350 degrees.
  6. In a food processor, pulse together all of the tart base ingredients slowly until a dough forms.
  7. Using silicone cupcake molds, press the dough into 1/4-1/2 inch thick layers to form 12 tarts.
  8. Bake the tart bases until hardened, about 17-20 minutes. Remove from the oven and let them cool completely.
  9. In a pan, caramelize the onions and garlic with 2 tbsp. of olive oil over high heat.
  10. Assemble the tarts by placing roasted tomatoes, caramelized onions and garlic, fresh thyme, and crumbled goat cheese on top of the baked tart bases.
  11. Bake for an additional 5-6 minutes at 350 degrees.
  12. Serve the tarts hot.
