SERVES 6 TO 8

INGREDIENTS:

  • 3 tablespoons extra-virgin olive oil
  • 3 onions, halved and sliced thin through the root end
  • ½ teaspoon brown sugar
  • 6 garlic cloves, minced
  • ⅛ teaspoon red pepper flakes
  • ½ cup dry white wine
  • 4 (15-ounce) cans cannellini beans, rinsed
  • 1 cup vegetable broth
  • 1 teaspoon minced fresh rosemary or ¼ teaspoon dried
  • 2 ounces Parmesan cheese, grated (1 cup)
  • Salt and pepper
  • 4 ounces Gruyère cheese, shredded (1 cup)
  • 2 tablespoons minced fresh parsley

INSTRUCTIONS:

  1. Caramelize the Onions: In a Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the onions and brown sugar, stirring frequently, until softened, about 5 minutes. Reduce the heat to medium-low and continue cooking, stirring often, until the onions are dark golden and caramelized, approximately 20 to 25 minutes.
  2. Add Aromatics and Wine: Stir in the minced garlic and red pepper flakes, cooking until fragrant, about 30 seconds. Pour in the white wine and cook until it is nearly evaporated, about 1 minute. Transfer the caramelized onions to a 13 by 9-inch baking dish and spread them into an even layer.
  3. Prepare the Bean Mixture: In the now-empty pot, add the cannellini beans, vegetable broth, and rosemary. Bring the mixture to a brief simmer for approximately 1 minute. Remove the pot from heat and gently stir in the remaining 1 tablespoon of olive oil and grated Parmesan. Season with salt and pepper to taste. Spread the bean mixture evenly over the caramelized onions in the baking dish.
  4. Add the Cheesy Crust: Sprinkle the shredded Gruyère cheese over the bean mixture, ensuring even coverage. Bake the gratin, uncovered, until the cheese is lightly golden and bubbling around the edges, which should take about 15 to 20 minutes.
  5. Serve: Garnish the Cannellini Bean Gratin with minced fresh parsley, adding a pop of color and freshness to the dish. Serve this delightful Tuscan-inspired gratin as a side or a main dish, accompanied by a fresh salad or crusty bread.

TIPS:

  • Caramelizing Onions: Take your time to caramelize the onions properly, allowing them to develop rich flavors and a deep golden color. The caramelized onions will serve as a flavorful base for the gratin, enhancing its overall taste.
  • Choosing the Right Cheese: Gruyère cheese is the ideal choice for the cheesy crust due to its melting capabilities and distinctive flavor. If you can’t find Gruyère, you can substitute it with a similarly melting cheese like Emmental or Swiss cheese.
  • Seasoning: Be sure to season the bean mixture with salt and pepper to taste, as this step will enhance the flavors of the dish. However, remember that the Parmesan and Gruyère cheeses are also salty, so adjust the seasoning accordingly.

Indulge in the comforting and savory flavors of this Cannellini Bean Gratin, a wonderful taste of Tuscany that will leave you and your guests craving for more. Enjoy the creamy beans, the aromatic herbs, and the delicious cheesy crust in this heartwarming and satisfying dish!
