A quick and elegant first course.

YIELD: 6 servings (as a first course)

INGREDIENTS:

  • 1 large or 2 small, very ripe avocados, pitted, peeled, and cut into chunks
  • 1 quart chicken broth, heated

 

INSTRUCTIONS:

  1. Put the avocados through the blender with the broth, puree until very smooth, and serve.

 

PER SERVING:

  •  3 grams of carbohydrates and 1 gram of fiber, for a total of 2 grams of usable carbs and 4 grams of protein.

 

TIP:

  • If you like curry, you’ve got to try this: Melt a tablespoon or so of butter and add 1/2 teaspoon or so of curry powder. Cook for just a minute, and add the mixture to the blender with the broth and avocados.
