INGREDIENTS:

  • 900 ml chicken stock or 900 ml vegetable stock
  • 2 (400 g) cans butter beans, drained & rinsed
  • 4 tablespoons sun-dried tomato paste or 4 tablespoons sundried tomato puree
  • 5 tablespoons pesto sauce

 

INSTRUCTIONS:

  1. Take the stock and butter beans and place them in a pan. Heat the pan until the mixture comes to a boil.
  2. Once boiling, lower the temperature and add the tomato puree. Stir well to combine.
  3. Blend in the pesto sauce and continue cooking for five minutes.
  4. After five minutes, transfer the mixture to a food processor and blend until smooth.
  5. Return the mixture back to the pan and heat it up again, stirring occasionally, for another five minutes.
  6. Finally, add the desired seasoning to taste.
