MAKES: ABOUT 1½ CUPS

 

INGREDIENTS:

  • ½ cup ground dried mild to medium red chile, such as New Mexican
  • ¼ cup ground dried ancho chile
  • ¼ cup mild sweet paprika
  • 2 tablespoons ground dried pasilla chile
  • 2 tablespoons kosher salt or coarse sea salt
  • 2 tablespoons turbinado sugar
  • 1 tablespoon ground dried chipotle chile
  • 1 tablespoon ground cumin
  • 1 tablespoon freshly ground black pepper

 

INSTRUCTIONS:

  1. Stir together all of the ingredients in a bowl until well combined.
  2. Sprinkle the rub heavily on large cuts of pork, ensuring even coverage, and then massage it well into the meat. Allow the seasoned meat to rest for at least 45 minutes at room temperature. For more intense flavor, you can wrap or cover the meat and refrigerate it overnight before cooking.
  3. Any remaining rub can be stored in a covered container in a cool, dark pantry for up to several months, ensuring you have a flavorful seasoning blend on hand for future use.

 

SPICING TIP:

  • For this dry seasoning, raw turbinado sugar, also known as “Sugar in the Raw,” is recommended. The coarser crystals of this steam-cleaned brown sugar add texture to the rub and stay drier on the surface of foods compared to regular brown sugar. Turbinado sugar is extracted from pure sugar cane, contributing a unique sweetness to the rub without making it overly moist.
