INGREDIENTS:

  • 1 large egg
  • 3 tablespoons lemon juice
  • 1/3 cup flour
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon paprika
  • 4 boneless, skinless chicken breast halves
  • 1/4 cup melted butter or margarine
  • 1 1/2-2 teaspoons chicken bouillon cubes
  • 1/2 cup hot water
  • 1 tablespoon capers, for garnish
  • Lemon wedges, for garnish

 

INSTRUCTIONS:

  1. In a small bowl, combine the egg and 1 tablespoon of lemon juice. Beat well.
  2. In another bowl, combine flour, garlic powder, and paprika. Stir well.
  3. Place the chicken breast between two sheets of waxed paper and pound until the chicken is flattened and even in thickness.
  4. Dip the chicken in the egg mixture, ensuring it is well-coated, then dredge it in the flour mixture, shaking off any excess.
  5. In a large skillet over medium-high heat, melt the butter. Add the chicken and cook for 2-3 minutes on each side, until browned.
  6. Dissolve the chicken bouillon cubes in hot water, then add it to the skillet along with 2 tablespoons of lemon juice. Bring the mixture to a boil, cover the skillet, and reduce the heat.
  7. Simmer the chicken for 10-15 minutes, or until it is cooked through and no longer pink in the center.
  8. Garnish the chicken with capers and lemon slices. Serve with lemon wedges on the side for added flavor.
