  • 4 teaspoons melted butter
  • 7 ounces Brie
  • 6 ounces cream cheese

  • 1 teaspoon butter
  • 1 recipe Roasted Red Bell Pepper Purée

  1. Begin by preheating your oven to 350°F. You’ll also need to bring 2 quarts of water to a boil, as this will be used to create a water bath for baking the timbales.
  2. In a food processor or blender, combine the melted butter, Brie cheese, cream cheese, sour cream, and eggs. Process the mixture until it becomes exceptionally smooth and well blended. Season the mixture with a pinch of cayenne, salt, and either white pepper or hot pepper sauce, depending on your preference. Adjust the seasonings to taste.
  3. Now, it’s time to prepare your ramekins or custard cups. Grease 8 (4-ounce) ramekins or small teacups with a teaspoon of butter. This will ensure that your timbales release easily once baked.
  4. Carefully fill each greased ramekin with the prepared egg mixture. These individual portions will create the timbales’ charming shapes.
  5. Place the filled ramekins into a deep roasting pan or baking dish. To create a water bath, pour boiling water into the pan until it reaches halfway up the sides of the ramekins. This gentle cooking method ensures even and creamy timbales.
  6. Transfer the roasting pan with the ramekins to the preheated oven. Bake for approximately 30 minutes or until the timbales are set and have a delicate golden hue.
  7. Once baked, remove the timbales from the oven and allow them to rest at room temperature for 10–15 minutes. This resting period helps them set further and makes them easier to unmold.
  8. To unmold the timbales, run a knife gently around the inside of each cup to loosen them. Then, invert the cups onto small plates. The timbales should release easily and retain their elegant shapes.
