  • 6 eggs, beaten, or Easy Tofu “Eggs”
  • 1 cup cottage cheese (optional; omit for a vegan version)
  • 2 cups Cheddar cheese or vegan cheese
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper

 

INSTRUCTIONS:

  1. Begin by greasing the slow cooker insert with a small amount of olive oil to prevent sticking.
  2. In a large mixing bowl, combine the grated potatoes, diced onion, and chopped green bell pepper.
  3. Add the Tempeh Sausage Crumbles to the mixture. If you’re not using Tempeh Sausage Crumbles and prefer a meatless version, feel free to use Morningstar Farm Sausage Style Crumbles as a substitute.
  4. In a separate bowl, whisk the eggs or prepare the Easy Tofu “Eggs” as per the recipe in this chapter. If you’re aiming for a vegan version, skip the cottage cheese.
  5. Mix the beaten eggs (or tofu mixture) into the potato and sausage mixture.
  6. If you’re not following a vegan diet, fold in the cottage cheese. Otherwise, omit it for the vegan version.
  7. Sprinkle the shredded Cheddar cheese (or your preferred vegan cheese) evenly over the top.
  8. Season the mixture with salt and black pepper to taste.
  9. Carefully pour the olive oil into the slow cooker insert to ensure that the casserole doesn’t stick during cooking.
  10. Transfer the prepared mixture into the slow cooker.
  11. Cover the slow cooker and set it to cook on medium heat for approximately 4 hours or until the casserole is fully cooked and set.
  12. Once cooked, allow the casserole to cool slightly before serving.
