INGREDIENTS:
- 1 lb smoked bacon, crumbled
- 5 cups kohlrabi, minced
- 1 cup pork rinds, crushed
- 2 1/2 cups grated Parmesan cheese
- 4 oz mascarpone cheese
- 4 cloves garlic, minced
- 1 cup cream cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste
INSTRUCTIONS:
- Chop or blend the kohlrabi until minced.
- In a large mixing bowl, combine the minced kohlrabi, crumbled bacon, cream cheese, mascarpone cheese, 1 cup grated Parmesan, minced garlic, salt, and pepper. Mix well until all ingredients are thoroughly incorporated. Refrigerate the mixture for 2-3 hours to firm up.
- In a separate bowl, prepare the breading mixture by combining the crushed pork rinds, remaining 1 1/2 cups grated Parmesan cheese, onion powder, and garlic powder.
- Remove the kohlrabi mixture from the fridge and shape it into about 30 even-sized balls.
- Heat oil in a frying pan. Roll each kohlrabi ball in the Parmesan breading mixture until evenly coated. Fry the balls in the hot oil until they turn a nice even golden brown all over.
- Once cooked, transfer the fried kohlrabi balls to a serving plate. Serve hot and enjoy!
