MAKES: 4 servings

TIME: 2 hours or longer, largely unattended

INGREDIENTS:

  • 2 pounds boneless pork shoulder, trimmed of excess fat and cut into large chunks
  • Salt and freshly ground black pepper
  • 2 cups fruity red wine, like Beaujolais or Burgundy (Pinot Noir)
  • 1 cup vegetable or chicken stock or water
  • 1 pound carrots, preferably fat ones, cut into large chunks
  • 10 cloves garlic, more or less, peeled
  • 2 tablespoons butter (optional)
  • Chopped fresh parsley leaves for garnish

INSTRUCTIONS:

  1. Combine all the ingredients except the butter and parsley in a saucepan, Dutch oven, or slow cooker. Bring the mixture to a boil and then adjust the heat so it simmers steadily but not too vigorously. If you’re using a slow cooker, set it to high and let it cook for a few hours.
  2. Cook the stew, stirring occasionally every 30 minutes or so, until the pork is incredibly tender and easily falls apart. Transfer the solid ingredients to a bowl using a slotted spoon, and increase the heat to high to reduce the liquid. If you’re using a slow cooker, transfer the liquid to a saucepan for this step. Reduce the liquid to about a cup or less, and taste and adjust the seasoning as needed. Lower the heat and stir in the optional butter for a smooth and velvety texture.
  3. Reheat the solid ingredients in the reduced sauce and serve the delectable Braised Pork Stew with Red Wine over egg noodles for a comforting and fulfilling meal. Garnish with chopped fresh parsley leaves to add a touch of freshness and color to the dish.

VARIATIONS:

  • Braised Pork with Red Wine and Coriander: Skip the carrots and use a halved head of garlic, along with cracked coriander seeds wrapped in cheesecloth. Squeeze in freshly squeezed lemon juice to taste and garnish with chopped fresh cilantro leaves.

  • Braised Pork with Horseradish Sauce: Use all stock for the liquid, add sliced onions instead of carrots, and include thyme leaves and red wine vinegar. Stir freshly grated horseradish or prepared horseradish into the reduced sauce just before serving.

  • Braised Pork Curry: Substitute coconut milk for the wine, and add minced fresh ginger, curry powder, and cayenne to taste. Proceed with the recipe.

  • Seared and Braised Pork: Use this technique for any of the variations or the main recipe. Brown all sides of the pork thoroughly in a large pot before proceeding with the rest of the recipe.
