  • Whisk vigorously, ensuring the yolks attain a vibrant lemon-yellow color and become thick, resembling the consistency of creamy salad dressing. Be cautious not to overheat the mixture; continue whisking to prevent lumps from forming. If it gets too hot, remove the bowl from the heat.
  • Once the egg yolks are ready, set the bowl on a damp towel on a stable surface. Gradually whisk in a few drops of cold water, followed by a few drops of the melted butter.
  • Continue adding the melted butter incrementally, ensuring each addition is thoroughly incorporated before adding more.
  • Season the hollandaise sauce with a pinch of cayenne, 1/4 teaspoon of salt, and the remaining lemon juice.
  • Steam the bunch of asparagus for approximately 5 minutes until they become tender but still retain their bright and vibrant color.
  • Divide the steamed asparagus onto individual plates.
  • Generously spoon the homemade hollandaise sauce over the middle of the asparagus stalks, allowing the velvety sauce to cascade over the fresh greens.
