We use bourbon alone as a quick and easy marinade for beef. This mop for barbecue and other smoke-cooking benefits from some of the same spirit and a little added complexity.

MAKES: ABOUT 3 CUPS
INGREDIENTS:
- 1½ cups inexpensive bourbon or other whiskey
- ½ cup white vinegar
- ½ cup water
- ¼ cup vegetable oil
- ½ medium onion, chopped
- 1 tablespoon steak sauce, such as A.1. Original
- 1 teaspoon kosher salt or coarse sea salt
- 1 teaspoon ground black pepper
INSTRUCTIONS:
- Combine Ingredients: In a saucepan, combine all of the ingredients.
- Heat Mop: Heat the mop before you plan to use it initially and keep it warm over low heat between bastes.
- Apply to Meat: Apply the mop to the meat about once an hour during the cooking process.
SPICING TIP:
- Keep in mind that while smoke-cooked beef benefits from basting, grilled beef may not require much basting. For grilled beef, you might want to consider brushing melted butter on the steak near the end of the cooking time for added flavor and moisture.
VARIATIONS:
- Sweet and Spicy Bourbon Sop:
- Add a touch of honey or brown sugar to the sop for a slightly sweet undertone.
- Increase the amount of hot sauce or include crushed red pepper flakes for extra heat.
